Indian ice cream as it's often called in the west. One of all time favourite desserts.Although numerous recipes are available to make this dessert at home but the one I am sharing can pass of as the easiest recipe of kulfi in the world and of course the tastiest as well

Ingredients

2 cup milk

2 tbsp sugar

1/2 tsp cardamom powder

4-5 strands saffron

4 slices of bread with edges chopped off

2 tbsp chopped nuts for garnish

Method

Powder the bread slices in the blender and keep aside

I a bowl bring the milk to boil

Add sugar, cardamom powder and saffron

Stir in the bread and cook for 3-4 minutes till the mixture thickens

Remove from heat and pour in a glass or aluminum container

Garnish with chopped nuts

Deep freeze overnight

Before serving put in the fridge for about 30 minutes

LEMON CURD SHORTBREAD RECIPE

INGREDIENTS

8 Lemons juiced

2 Lemon zest

1/3 Olive oil

4 tbsp Butter

1 cup Powdered sugar

2 Eggs whole

3 egg yolks

Pinch of salt

For the Shortbread

125 gm Maida(All Purpose Flour)

1 tsp Baking powder

45 gm sugar

20 gm Sugar powdered

10 tbsp Butter

Pinch Coarse sea salt

INSTRUCTIONS

Mix ingredients in a bowl.

Grease spring baking tin 8″

Add the dough and press gently with palms and bake in pre-heated oven at 170 deg for 20 till pale brown

Whisk eggs for curd.

Mix in all ingredients and mix well, in a low heat bring mixture to a boil and remove quickly.

Pour lemon curd on shortbread and bake for 10 mins.

Remove and bring to room temperature.

Refrigerate and serve chilled
