Healthy strawberry millet cake

Millet Strawberry Cake

Soft millet sponge layered or topped with fresh strawberries — healthy yet indulgent.


Ingredients (Serves 8)

Dry Ingredients

  • 1 cup millet flour (foxtail / jowar / bajra – mild millet preferred)
  • ½ cup almond flour (or oat flour for gluten-free)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ¾ cup sugar or jaggery powder
  • ½ cup oil OR melted butter
  • 1 cup milk (or plant milk)
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp vanilla essence
  • ½ cup yogurt (for softness)

Strawberry Component

  • 1 cup fresh strawberries (chopped)
  • 2 tbsp sugar or honey
  • 1 tsp lemon juice

Optional Garnish

  • Whipped cream
  • Extra strawberries
  • Mint leaves
  • Powdered sugar

👩‍🍳 Method


1. Prepare Strawberry Layer

  1. In a bowl, mix chopped strawberries with sugar and lemon juice.
  2. Let it sit for 10–15 minutes to release juices (maceration).
  3. Option: lightly cook for 3–4 minutes for a jammy texture.

2. Preheat

  • Preheat oven to 180°C.
  • Grease and line a cake tin.

3. Mix Wet Ingredients

  1. In a bowl, whisk:
    • Sugar/jaggery
    • Oil/butter
    • Yogurt
    • Milk
    • Lemon juice
    • Vanilla
  2. Mix until smooth.

4. Combine Dry Ingredients

In another bowl, whisk:

  • Millet flour
  • Almond/oat flour
  • Baking powder
  • Baking soda
  • Salt

5. Make the Batter

  • Add dry ingredients into wet ingredients.
  • Fold gently (do not overmix).
  • Batter should be slightly thick but pourable.
  • Add a little milk if needed.

6. Assemble & Bake

Option A – Folded Cake

  • Gently fold half the strawberries into the batter.

Option B – Layered Cake

  • Pour batter into tin, then swirl strawberries on top.

Bake at 180°C for 30–35 minutes until a toothpick comes out clean.


7. Finish

  • Cool completely.
  • Top with fresh strawberries and whipped cream OR glaze with strawberry syrup.

Chef Tips

  • Millet flour can make cakes dense—don’t overmix.
  • Use sweet, firm strawberries (not watery).
  • Add 1 tbsp honey in batter for extra moisture.
  • For a richer cake: replace ¼ cup milk with cream.
  • Add lemon zest for a fresh flavour boost.

  • Serve with vanilla ice cream
  • Pair with yogurt or mascarpone
  • Dust with icing sugar for a café look
