Butter chicken is one of the most loved dishes in the Indian cuisine and I’m quite proud to be a part of the legacy. As you must be aware, the Butter Chicken was invented by my grandfather and the founder of Motimahal, Sri Kundan Lal Gujral. It was but a delicious accident, when the chicken tikka , which went a little dry hanging by the side of hot tandoors that lead to the invention of this makhani gravy , so that the chicken could be sauted in this sauce to over come the poor tikka`s dry spell . The makhani gravy is incomparable as it is versatile, one can add this to any veggies, paneer or meat and make a flavoursome curry. So I’m going to give away a few secrets and let you in on the original Motimahal Makhani Recipe. You can store this in your fridge and use it for a rainy day or just whenever you crave a taste of pure awesomeness!

    Instructions

    1. Take a pan , put oil and heat it over fire. Put onion and sauté for few seconds.
    2. Put chopped tomatoes , bayleaf and salt in the pan and let it simmer , stirring occasionally till the oil separates from the sides.
    3. Blend and strain the sauce. Pour in a pan and heat over fire. Add all the spices.
    4. You can cool this sauce and store this in your fridge or freezer.
    5. When you'd like to make butter chicken simply add in the Tandoori Chicken , stir for a 3-4 minutes.
    6. Add butter and stir till it melts in cream and remove quickly. Garnish with green chilies and coriander with a drip of cream.
