Red Wine Chicken Recipe

    1. Place chicken in a glass bowl. Pour wine all over and mix well. Cover dish or bowl and refrigerate to marinate for at least 2 to 3 hours.
    2. Remove chicken breasts from marinade, discarding remaining liquid.
    3. Season with basil, red chilli powder, garlic, salt and pepper.
    4. Heat oil in a medium-sized fry pan over medium high heat.
    5. Add chicken and saute on each side for about 20 minutes until its a nice brownish-red colour.
    6. Add chopped capsicum and sauté for 2-3 minutes. Remove and serve hot with rice.
