With summers here in full swing and mangoes flooding the market, the heat calls for something that is refreshing and light on the palette. My recipe for this no-bake chia, mango, and yogurt cheesecake is healthy and simple and can be made easily. I’ve left the sugar out and let the natural ingredients and honey work its sweet magic! Here’s the recipe, I hope you enjoy it!

    Ingredients

    Instructions

    1. For the Crust: Crush all the biscuits in a food processor.
    2. Add the butter, salt, honey and mix well.
    3. Pour the mixture in a springform pan and evenly spread it. Freeze the crust for 20 mins.
    4. For the Filling: Mix the greek yogurt, cream, honey, gelatin well.
    5. Get the tin out of the fridge and pour the mix on the crust. Freeze for 1-2 hrs.
    6. For the Jam: Puree the mangoes and add them to a pan along with lemon juice, chia seeds, honey and mix well.
    7. Cook it for 2 mins and let it cool down.
    8. Get the tin from the freezer and pour the jam on top of the filling. Put the tin back into the freezer for 1-2 hrs.
    9. Garnish with chopped mangoes and enjoy cold!
