Lemon Curd Cake Recipe

    Tangy, citrusy and fresh this tea cake recipe will leave you wanting for more!



    1. Beat egg whites in a bowl till soft peaks are formed.
    2. In a separate bowl mix egg yolks, lemon juice, castor sugar and beat with an electric beater till curd like consistency is obtained.
    3. Add baking powder and flour and mix till the mixture is smooth.
    4. Stir in the lemon zest.
    5. Fold in the egg whites slowly into the batter.
    6. Now swirl in the lemon preserve.
    7. Prepare a spring form tin by greasing it and pour the batter in.
    8. Place the mixture in a pre-heated oven at 170 deg.
    9. Bake for 40 mins on low heat. Insert a needle in the centre to check if it's done.
    10. Serve with ice-cream.
