Homemade Mango Jam is a great way to enjoy those delicious tropical and summery flavours for the rest of the year. You can add your own infusions and also make it healthy by add jaggery instead of sugar. Add mint or cinnamon also adds beautiful flavours to the jam. You can enjoy it with just a slice of toast or top it on a dessert, either ways it’s super yummy!

    Instructions

    1. Peel the mangoes and add to a large pot along with the core.
    2. Add the sugar and lemon along with the rind this has pectin and allows the jam to set.
    3. Cook in low heat for 30mins. Pull out the lemon peel.
    4. Set a plate in the freezer for 10mins. Pull it out and pour some jam on it, this will cool the jam instantly and will help you check if the jam is done.
    5. If the jam is still running, cook it a bit more and repeat the test until the jam has set. Always keep an eye on the cooking Jam as to not burn the jam.
    6. Sterilise glass jars.
    7. Cool the jam to room temperature and bottle them up.
