Ingredients
- 1 cup pearl farro
- 21/4 cup Vegetable broth
- 1/2 cup grated parmesan cheese
- 3 tbsp extra virgin olive oil
- 250 gm sliced mushrooms
- 1 cup frozen peas
- 1 tsp paprika powder
- 2 tsp chopped garlic
- 2 sprigs Thyme
- 2 tsp chopped olives
- 2 tsp Coarse sea salt
- 1 tsp coarse black pepper
Instructions
- in a deep pan heat olive oil
- add green onions , mushroom and peas sauté for 3 minutes
- add farro ,,paprika , thyme and salt .sauté for 4-5 minutes
- add boiling vegetable broth to farro
bring everything to boil and thenm cook on medium heat for about 20 minutes
cover and cook till all water is absorbed
- remove from heat sprinkle parmesan and garnish with chopped olives
